First make the salad dressing.
You will need:
100ml olive or sunflower oil
50ml apple cider vinegar
50ml honey
Handful of blackberries and raspberries or redcurrants if you have
Whizz everything with a handheld mixer or in a blender
Remove the stalks of kale leaves and chop finely.
Add any berries you may like, pop over some of the dressing and toss well.

This chopped salad celebrates raw cauliflower, a hearty vegetable often reserved for roasting, which renders it golden and soft. Here, crunchy, thinly sliced cauliflower and radicchio bring a mix of slightly sweet and pleasantly bitter flavours. This salad makes the perfect side to your summer bbq.
For the dressing whisk together:
6 tbsp olive oil
Juice and zest of 1 lemon
1 tsp honey
Salt and black pepper
Slice the cauliflower as thinly as you can, add coarsely torn radicchio leaves and finely sliced scallions. Customise the salad with whatever crunchy vegetables you have on hand - celery, fennel and cabbage all make great candidates.

Just chop up watermelon into small cubes. Slice the cucumbers - mini cucumbers work really well here but if you’re using bigger ones, you should half or quarter them before slicing to make them more bite size. Cut some vegan feta style cheese into cubes. We also like adding some fresh dill here. Toss everything with a good quality olive oil and top with Good4U Super Seeds Salad Topper. Enjoy!
]]>Slice the aubergines lengthwise into 1cm thick slices and then crosshatch the flesh with a sharp knife. Drizzle with plenty of extra virgin olive oil and sprinkle with a little salt. Grill until the surface begins to brown and the flesh becomes silky and soft.

For tofu to taste good, it needs to have an irresistibly crispy outside, a soft and fluffy inside, a delicious sauce, plus more delicious sauce. This peanut sauce is the key here and is amazing in any other dish as well.
For the tofu:
1 block extra firm tofu
1 tbsp low sodium tamari or soy sauce
1 tsp toasted sesame oil
1 tbsp maple syrup or honey
40 g corn starch
120 g peanut sauce
Peanut Sauce:
190 g peanut butter
3-4 tbsp soy sauce or tamari
1-2 tbsp maple syrup
1 tbsp toasted sesame oil
2 tbsp rice vinegar
½ cup warm water to thin or more as needed
½ tsp ground ginger
2 small cloves garlic, minced
1 tbsp lime juice
1/4-1/2 tsp chilli flakes
Remove the tofu from the package and drain out the excess liquid.
Chop the tofu into small cubes, about 1/2 to 1 inch. Add to a bowl with the marinade (1 tbsp tamari, 1 tsp sesame oil, and 1 tbsp maple syrup or honey). Let marinate for about 20 minutes.
Preheat the oven to 180°C.
Once marinated, toss with the cornstarch, then toss with the breadcrumbs. Add to a baking sheet lined with parchment paper, leaving space between each piece so they can really get crispy.
Bake for 25-30 minutes or until golden brown and crispy.
While baking, prepare your sauce and veggies. The sauce makes more than you will need for this recipe, but it stores really well in the fridge so you can save it for noodles or use as a dip for veggies.
Add all ingredients aside from the water and whisk together until smooth. Slowly pour in the water until your desired consistency is reached. Start with 1/4 cup and add more as needed.
When the tofu is done, remove from the oven and let cool for 5 minutes. Toss with 1/2 cup of the sauce.

]]>This is another great take on a classic caesar salad.
Instead of chopping the lettuce for the salad, cut the little gem in half lengthwise or quarters -depending on the size of the lettuce. Red radicchio works really well as well. Pop under the grill for few minutes to brown a bit or even pan fry. Lay out on a plate, drizzle with vegan caesar dressing, vegan parmesan and a generous amount of Good4U Caesar Crumbles.
Always finishing with a few twists of freshly ground black pepper.
