Good4U Mexican Salad

Yields1 Serving

 85 g cooked wholegrain rice
 2 tbsp kidney beans
 2 tbsp sweetcorn
 2 tbsp roasted chickpeas
 1 tbsp hummus
 12 fresh chillies (optional
 25 g Good4U Garlic & Chilli Salad Topper
 2 handfuls mixed leaf lettuce

Wash the tomatoes and lettuce in cold water and pat dry


Cut the tomatoes into halves and toss in a bowl with the greens


Layer kidney beans, sweetcorn, rice and roasted chickpeas on top


Add one large tbsp of Hummus and top with plenty of our Good4U Garlic & Chilli Salad Topper
