Roast Veggie Salad

 4 Beetroots, peeled and quartered
 3 Red Onion, peeled and quartered
 3 Carrots, peeled and sliced
 ½ Sweet potato, peeled and chopped in squares
 ½ Butternut squash, peeled and chopped in squares
 8 Baby potatoes, halved
 ½ Punnet, Good4U Salad Topper Lentil sprout mix
 1 Bag of Mixed salad leaves
 2 tbsp Honey
 Rapeseed oil
 Salt/pepper

Pre – heat the oven to 180˚C and leave it on;

Meanwhile peel and prep all the vegetables. When chopping the vegetables, leave them quite chunky;

Place a parchment paper on baking tray and place all the prepped vegetables on it. Season with salt and pepper and 2 tbsp of honey;

Roast them for 35min or until cooked and tender;

Take out of the oven and let them cool;

Meanwhile, wash the mixed salad leaves, drain them and set aside;

7

Put all the ingredients in a bowl and mix gently;
