The Salad Formula: Grilled Asparagus Cous Cous Salad

Serves: 2 as a main or 4 as a side
Ingredients:
Grain base: Cous cous and Good4U Lentil Sprouts
Protein: Edamame beans
Colour: Asparagus, capers, radishes
Dressing recipe:
2 tbsp extra-virgin olive oil
1 tbsp white wine vinegar
1 tsp Dijon mustard
1 tsp fresh thyme leaves
¼ tsp pure maple syrup
¼ tsp sea salt
Black pepper
2 tbsp water
Season: Lemon

Method:
- Cook the cous cous according to package instructions, and place in the bowl with a layer of lentil sprouts.
- Coat the asparagus in salt, pepper and olive oil, and place under the grill or fry in a saucepan until soft.
- Add the edamame beans, sliced radish and capers to the salad bowl.
- Make your dressing by combining all dressing ingredients, then pour over the salad.
- Sprinkle with the salad topper and mix everything together.
- Add the grilled asparagus on top, sprinkle with the lentil sprouts and serve!
