Nut-free Carrot Cake Overnight Oats

Ingredients:

400ml oat milk

90ml vegan yoghurt 

3 tbsp maple syrup

1 tsp vanilla extract

1 tsp cinnamon 

½ tsp ginger 

½ tsp nutmeg 

Pinch of salt 

170g rolled oats 

2 tbsp chia seeds 

140g shredded carrot

3 tbsp Good4U Vitamin Breakfast Boost


Method: 

  1. In a large mixing bowl, combine the milk, yoghurt, maple syrup, vanilla extract, cinnamon, ginger, nutmeg and salt. 

  2. Next, add in the oats, chia seeds, shredded carrots and breakfast boost, mix well and let sit for 5 minutes. 

  3. Fill up some mason jars/any container with the mixture and store in the fridge for at least 4 hours. 

  4. Finally, sprinkle on some extra breakfast boosts and enjoy a delicious breakfast treat.
