Plant-based, One-pan Sheet Pancakes:

Makes: 8 servings 


Ingredients:

280g plain flour

45g caster sugar

20g baking powder 

½ tsp salt 

480ml oat milk 

20ml lemon juice

90g plant-based butter, melted

1 tsp vanilla extract

3 tbsp Good4U Kids Breakfast Boost

Handful of strawberries, for topping

Handful of raspberries, for topping

Handful of banana slices, for topping

Handful of blueberries, for topping


Method:

  1. Preheat oven to 200/180°C fan and line a sheet pan with parchment paper. 

  2. Mix together the flour, sugar, baking powder and salt in a large bowl, then add in milk, lemon juice, melted butter, vanilla extract and boost powder, mixing until fully combined. The batter will be lumpy and bubbly, which is fine. Be sure not to overmix or it will lose the fluffiness of the pancakes!

  3. Pour the batter into the sheet pan and spread evenly with a spatula. 

  4. Top the pancake mixture with some of your chosen toppings (we picked some berries) and place into the oven to bake for 15 minutes. 

  5. Once fully baked, slice and serve with some plant-based cream and some extra berries for some extra deliciousness and enjoy!
