Creamy green pasta sauce

Ingredients: 

  • 50g butterbeans
  • Half a broccoli head 
  • 250g spinach 
  • Juice from 1 lemon
  • 120ml water 
  • 3 tbsp olive oil
  • ½ tsp salt 
  • 1 scoop of Good4U Vitamin Breakfast Boost 

 

Method:

  1. First, chop the broccoli into small pieces and boil until tender—you’ll know it's ready when a knife slides through easily. 
  2. Once it's perfectly soft, drain the water and toss the broccoli into a blender. 
  3. Add the butterbeans, fresh spinach, a squeeze of zesty lemon juice, water, a drizzle of olive oil, a pinch of salt, and a scoop of breakfast boost to the blender. 
  4. Blend everything together until you’ve got a luscious, green, creamy sauce. 
  5. Finally, heat up the sauce to serve it over your favourite pasta or store it in jars in the fridge for later. Enjoy!
