Hearty Lentil and Mushroom Ragu

Ingredients:
15ml olive oil
150g onion, diced
6–8g garlic, minced
200g carrots, diced
225g mushrooms
45ml tomato paste
⅛ tsp chilli flakes
1 tbsp dried oregano
360g lentils (dry)
1 large handful of Good4U Super Beans
800g diced tomatoes (canned)
480ml vegetable broth
120ml red wine
Salt and pepper to taste
450g pasta of choice
Handful chopped parsley to serve
Handful Good4U Super Greens to serve
Method:

In a large pot, heat oil over medium heat. Add onions and saute for 5 minutes.

Add garlic, carrots, mushrooms, tomato paste, chilli flakes, and oregano, and saute for 4 minutes, or until mushrooms begin to soften.

Add lentils, diced tomatoes, vegetable broth and wine, bring to a boil.

Add your Good4U Super Beans to the pot. Cover, reduce heat to low and simmer for 30 – 40 minutes, until lentils are tender. Add more water or broth if needed.

Cook pasta according to package directions.

Serve ragu over the pasta. Top with chopped parsley and a sprinkle of Good4U Super Greens.
