Nutritious Warm Buddha Bowl

Ingredients:

  • 1 tbsp olive oil
  • 200g cherry tomatoes
  • 200g broccoli 
  • 200g brown rice
  • 200g spinach 
  • 1 avocado 
  • 2 tbsp Good4U Super Beans 
  • Pinch of salt and paprika 
  • A handful of Good4U Garlic and Chilli Salad Toppers
  • A sprinkling of Good4U Super Greens 
  • Spinach Dressing:
    • 200g spinach 
    • 6 sundried tomatoes
    • 5 tbsp olive oil 
    • Pinch of salt
    • 120 ml of water

 

Method:

  1. In a saucepan, cook your brown rice per the package instructions.
  2. In a large pan, heat up some olive oil and roast the cherry tomatoes and broccoli for 3 minutes.
  3. In a large bowl, place the cooked rice as a base layer. Then begin placing tomatoes, spinach, broccoli and sliced avocado around the bowl. Next, add Super Beans for an extra source of protein. 
  4. To create the spinach dressing, place some spinach, sundried tomatoes, olive oil, salt and water in the blender and blend until you have reached dressing consistency. 
  5. Next, drizzle some spinach dressing over the Buddha bowl, and top it with paprika, salt, Salad Toppers and Super Greens.
  6. Finally, you are ready to serve in 2 bowls and enjoy!
