Plant-based, Spaghetti and Meatballs with Marinara Sauce

Ingredients

300g plant-based meatballs

For the tomato sauce

1 tsp olive oil

1 white onion, finely chopped

2 garlic cloves, crushed

1 tbsp balsamic vinegar

75g tomato puree

400g chopped tomatoes

300ml reduced salt vegetable stock

Salt 

2 tsp Good4U Kids Pasta Boost 

To serve

300g spaghetti

Plant-based parmesan cheese (optional)

Fresh basil leaves


Method:

  1. To make the sauce: Heat the olive oil in a saucepan. Add the chopped onion and sauté for 5 minutes. Then add the crushed garlic and cook for 1 minute. Next, add the balsamic vinegar and leave to reduce for 1 minute.

  2. Add the tomato puree, chopped tomatoes, vegetable stock, a pinch of salt and some Kids Pasta Boost. Mix and simmer for 20 minutes.

  3. Meanwhile, preheat the oven to 200/180°C fan and line a baking tray with parchment paper. Place the meatballs onto a baking tray and cook for 20 minutes

  4. Cook the spaghetti as per the pack instructions, drain and set to one side.

  5. Season the tomato sauce with salt and pepper, add the cooked meatballs and toss to coat. Remove the meatballs from the sauce and set aside.

  6. Mix the cooked spaghetti with the sauce, fully coating it. Then you are ready to serve! Place the spaghetti on a plate, top with meatballs, parmesan and basil, and enjoy!
