Super Bean Burgers

Super Bean Burgers


Ingredients:

400g cooked black beans, drained and rinsed

40g grated yellow onion

2 tsp garlic, minced

15g chipotle peppers from a can of chipotles in adobo, diced

30ml adobo sauce

15ml tamari

15ml balsamic vinegar

1 tsp ground cumin

1 tsp sea salt

1 tsp freshly ground black pepper

1 handful Good4U Super Beans

Flax egg (mix 1 tbsp ground flaxseed with 2½  tbsp warm water)

100g panko bread crumbs

Extra-virgin olive oil, for brushing

Hamburger buns for serving

Desired fixings for serving (we have used lettuce, onion, tomato, Good4U Super Greens and plant based mayo and cheese!)



Method:

  1. In a large bowl, add the beans, onion, garlic, chipotles, adobo sauce, tamari, balsamic, cumin, salt, pepper and Good4U Super Beans.

  2. Use a potato masher to mash until the mixture holds together but still has some visible chunks of black beans. 

  3. Add the flax egg and use a spatula to fold until combined. Then, fold in the panko.

  4. Use your hands to form the mixture into 6 patties. The mixture should be cohesive and a little wet. If it’s too wet to handle, chill in the fridge for 20 minutes to firm up or mash your beans a little bit more.

  5. Heat a pan over medium heat. Brush with a little oil and cook the burgers for about 5 minutes per side, until charred on both sides, turning the heat down as necessary.

  6. Serve in hamburger buns and desired fixings, we use lettuce, onion, tomato, Good4U Super Greens, plant based mayo and cheese!
