Teriyaki Tofu Stir fry Bowl

Makes: 3 servings
Ingredients:
For tofu:
410g block extra-firm tofu
1 tbsp low-sodium soy sauce
2 tbsp cornstarch
30 ml canola oil
For teriyaki sauce:
60ml low-sodium soy sauce
60ml water
55 g packed brown sugar
2 tbsp seasoned rice vinegar
2 tsp grated fresh ginger
4 cloves garlic, minced
2 tsp cornstarch mixed with 1 tbsp water
For serving:
740 g cooked rice
steamed broccoli
Handful of chopped green onions
Handful of Good4U Super Beans
Sprinkle of Good4U Stirfry Toppers
Method:

Prep the tofu by tapping it dry with a paper towel and chopping it into small cubes.

In a medium bowl, prepare the teriyaki sauce by adding the soy sauce, water, brown sugar, seasoned rice vinegar, ginger and garlic. Stir to combine and set aside while you make the tofu.

In a large bowl, drizzle the soy sauce on top of the tofu and stir gently with a silicone spatula or small spoon. Be careful not to rip the tofu. Now sprinkle on the cornstarch and gently stir it again to coat.

Heat a large non-stick pan over medium-high heat. Add the oil to coat the pan.

Once the oil is hot, add the tofu in a single layer (do this in batches if needed). Let the tofu get crispy and golden on all sides. Use a fork to flip each piece over gently.

Once the tofu is golden, turn the heat down to low heat. Stir the teriyaki sauce in the bowl once more before pouring it into the pan with the tofu. Bring to a simmer and cook for a minute or two.

In a small bowl, stir together the cornstarch and water, then add to the pan. Stir constantly until the sauce thickens

Whilst the tofu is cooking, begin steaming some broccoli and cooking the rice.

Serve up your stir-fry, topping your rice with broccoli and tofu. Finally, sprinkle on some green onion, Super Beans and Stirfry Toppers and enjoy!
