Tofu Skewers with red peppers, courgette, yellow peppers, red onion
Ingredients
- 1 block extra firm tofu (The Tofoo co. used in this recipe)
- 4 tbsp tamari
- 1 red pepper
- 1 yellow pepper
- 1 red onion
- 1 courgette
- 100g Good4U Garlic & Herb Salad Topper (for the coating)
- olive oil (for cooking the tofu)
Toppings
- Good4U Vitamin Boost
- Mixed Berries
- Cacao nibs
Method
- Chop your veggies to equal size
- Blitz Good4U Garlic & Herb Salad topper until ground to breadcrumb texture
- Cut your tofu into similar size to veggies
- Pat dry the tofu until moisture is removed
- Dip the tofu in the tamari or soya sauce and coat in the seed crumb. Make sure that they are well coated.
- Add veggies and tofu to skewers and just before you grill lightly brush with olive oil
