Tofu Skewers with red peppers, courgette, yellow peppers, red onion

Ingredients

  • 1 block extra firm tofu (The Tofoo co. used in this recipe)
  • 4 tbsp tamari
  • 1 red pepper
  • 1 yellow pepper
  • 1 red onion
  • 1 courgette
  • 100g Good4U Garlic & Herb Salad Topper (for the coating)
  • olive oil (for cooking the tofu)

Toppings

Method

  1. Chop your veggies to equal size
  2. Blitz Good4U Garlic & Herb Salad topper until ground to breadcrumb texture
  3. Cut your tofu into similar size to veggies
  4. Pat dry the tofu until moisture is removed
  5. Dip the tofu in the tamari or soya sauce and coat in the seed crumb. Make sure that they are well coated.
  6. Add veggies and tofu to skewers and just before you grill lightly brush with olive oil
