Zero-Waste Special Fried Rice

Ingredients: 

  • 600g cooked white rice
  • 2 tbsp olive oil 
  • 2 large eggs, whisked 
  • 100g chopped onion
  • 100g chopped carrots 
  • 100g frozen peas 
  • 1-2 tsp minced garlic 
  • 3 tbsp light soy sauce
  • ½ tsp sesame oil 
  • Salt and pepper to taste
  • Sprinkle of Good4U Garlic and Herb Salad Toppers 

 

Method:

  1. Place some olive oil in a large skillet, letting it coat the bottom evenly and add in the chopped onions and carrots, cooking for about 2 minutes. 
  2. Next, stir in the garlic and peas. 
  3. Move all the veggies to one side of the skillet and crack in the eggs. Scramble them, then mix everything together, gently folding in the cooked rice. 
  4. When everything is perfectly cooked, drizzle with soy sauce and sesame oil, seasoning to taste. 
  5. Finally, serve up this tasty dish with some nutritious salad toppers for an extra boost, and enjoy!
