1-Pot Vegetable Lentil Stew

Ingredients:
- 15ml water
- 1 garlic clove
- 1 shallot (diced)
- 120g carrots (thinly sliced)
- 80g celery (thinly sliced)
- Salt and pepper to taste
- 250g baby potatoes (chopped)
- 480ml vegetable stock
- 1 sprig fresh thyme
- 100g lentils
- 65g kale
- Sprinkle of Good4U Super Beans
- Sprinkle of Good4U Garlic and Herb Salad Toppers
Method:
- Start by heating a large pot of water over a medium heat. Once hot, add garlic, shallots, carrots, and celery to the water. Stir slightly and season with salt and pepper.
- Saute for 4-5 minutes, then add the potatoes, stir, and cook for 2 more minutes.
- Next, add in the vegetable stock and thyme, whilst increasing the temperature to medium-high, bringing to a simmer. Once simmering, add in the lentils and stir. Once simmering again, reduce heat to low and simmer uncovered for 15-20 minutes or until lentils and potatoes are tender.
- Once potatoes are tender, add in your kale and cover for 3-4 minutes. Season your stew to your liking with salt and pepper.
- Finally, you are ready to serve up your stew with a sprinkle of salad toppers and super beans, and enjoy!
