Everyday Nourish Bowl with a Spicy Miso Dressing

Ingredients:
For the bowl:
Approximately 600g cooked brown rice, cooled
Approximately 70g red cabbage, shredded
Approximately 70g green cabbage, shredded
1 large carrot, shredded
1 large cucumber, thinly sliced
225g frozen shelled edamame
225g firm tofu, cubed and pan-fried or air-fried
For the spicy miso dressing:
60g tahini
1 tbsp lemon or lime juice
2 tbsp light soy sauce
1 tsp miso paste
2 tbsp maple syrup
1 tbsp sesame oil
1 tsp fresh ginger, grated
1 large garlic clove, minced
1 tsp crispy chilli oil
Salt and pepper, to taste, optional
Water, as needed
To serve:
1 spring onion, finely sliced
Fresh coriander
1 handful Good4U Super Seeds
1 lime, cut into wedges
Method:

Cook the brown rice ahead of time and allow it to cool to room temperature. Alternatively, prepare it the night before and keep refrigerated until needed.

Bring a saucepan of water to the boil and cook the frozen edamame until tender. Drain, rinse under cold water and set aside to cool.

Pan-fry or air-fry the cubed tofu until golden and crispy, then set aside.

To make the dressing, whisk together the tahini, lemon or lime juice, soy sauce, miso paste, maple syrup, sesame oil, ginger and garlic.

Add 1 tbsp water at a time until the dressing reaches your desired consistency. Season with salt and pepper, if required and top with crispy chilli oil.

Add the cooled rice, red cabbage, green cabbage, carrot, cucumber, edamame and tofu to a large bowl.

Pour over the spicy miso dressing and toss everything together until evenly coated.

Garnish with the spring onion, coriander and a generous handful of Good4U Super Seeds.

Finish with a squeeze of fresh lime and serve.
