Halloween-Inspired, Orzo-Stuffed Peppers:

Makes: 4 servings


Ingredients:

4 peppers, a mix of green, red and yellow

1 tbsp olive oil 

1 red onion, chopped 

2 garlic cloves, chopped

1 aubergine, chopped 

200g orzo, cooked and drained

2 tbsp sundried tomato paste 

Zest of 1 lemon

Handful of fresh basil 

2 tbsp Good4U Kids Pasta Boost


Method:

  1. Start by cutting the tops off the peppers (keeping the tops to one side) and removing the seeds and any white flesh from inside. Use a small, sharp knife to carve spooky Halloween faces into the sides. 

  2. In a pan, heat the oil over medium heat. Cook the onion in the oil for 8 mins to soften. Whilst the onion is cooking, preheat the oven to 200/180°C Fan and prepare a baking tray with some parchment paper.

  3. Next, stir in the garlic and aubergine for another 10 minutes until the veg has softened. Then add in the cooked orzo, tomato paste, lemon zest, basil and Kids Pasta Boost to the pan and stir until warmed through. 

  4. Once the mixture is cooked through, begin filling the peppers. Place the lids back on, using cocktail sticks to secure them in place. Lay the peppers onto the baking tray, with the carved faces facing upwards. 

  5. Place the peppers into the oven for 15 minutes; the peppers should be soft but not lose the shape of the carved faces.  

  6. Finally, remove from the oven and let cool slightly before enjoying this delicious, kid-friendly dish.
