Laura’s Easy Bean Burger

Makes: 4-6 patties

For the Bean Burgers:

1 can butter beans, drained, rinsed, and patted dry (Bunalun butter beans used in this recipe)

1 pack of Good4U lentil sprout mix

½ red pepper

½ sweet potato (cubed and roasted until tender)

2 garlic cloves, finely chopped

5 tbsp Good4U garlic & chilli salad topper

Handful fresh coriander

1 teaspoon ground cumin

½ teaspoon ground coriander

1/2 teaspoon chili powder

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

pinch salt + pepper

olive oil for brushing before grilling

 

For the Garlic Pesto:

Chilli, Coriander & Lime Wild Garlic Pesto

One bunch Wild Garlic - approx 6 stems with leaves & flowers

3 handfuls fresh coriander

1 packet Good4U Salad Topper Garlic & Chilli

Grated Zest from 1 Lime

1 small fresh red chilli

Sprinkle Sea Salt

Olive oil approx 50ml - add more for desired texture

 

Method

 

  1. To make the garlic pesto, blend the pesto ingredients. Set aside.
  2. To make the bean burgers, add all ingredients to a blender and blitz until desired texture. Form into patties (you might need some flour to form the patties, dust tray with flour and set patties on the tray and cover with cling film and leave in fridge for at least 2 hours before cooking
  3. For the toppings we used our homemade pesto, The Foraging Fox’s Avocado and Lemon mayo, lettuce and tomato. 
  4. Serve on your favourite burger buns. We used Genius Gluten Free burger buns.
