Quick and Easy Green Thumb Sandwich:

Ingredients:

For yoghurt dressing:

  • 3 tbsp Greek yoghurt
  • 1 tbsp lemon juice 
  • 1 tsp rice vinegar
  • 1 tsp chopped basil 
  • ¼ tsp garlic powder
  • Salt and pepper to taste

 

For Sandwich:

  • 4 slices whole grain bread
  • 110g herbed goat cheese
  • ½ cucumber
  • 1 green pepper
  • ½ Good4U Super Sprouts 
  • 1 medium avocado 

 

Method:

  1. To make the yoghurt dressing, combine all dressing ingredients in a small bowl, mixing well, then set aside. 
  2. To prepare the sandwich, begin by slicing the cucumber, pepper and avocado into strips.
  3. Next, spread some goat cheese over a slice of bread, placing the cucumber, pepper and Good4U Super Sprouts on top, then drizzle a serving of yoghurt dressing over and top off with some sliced avocado and another slice of bread. 
  4. Finally, enjoy the tasty goodness!
