Super Easy Chickpea ‘Tuna’ Wraps

Makes: 1 wrap
Ingredients:
- 230g chickpeas canned
- 3 tbsp vegan mayo
- 1 tsp dijon mustard
- 1 tsp lemon juice
- 2 tbsp spring onion sliced
- 1 ½ tsp fresh dill chopped
- salt and pepper to taste
- 1 regular tortilla wrap
- 1 handful of romaine lettuce
- 1 small handful of Good4U Super Greens
Method:
- Place the chickpeas, mayo, mustard, lemon juice, spring onion and fresh dill into a large bowl.
- Mash up the ingredients in a bowl with a fork or masher to your desired texture.
- Spoon the filling mixture onto the centre of the wrap and spread evenly.
- Sprinkle over some lettuce and Good4U Super Greens to the centre of the wrap.
- Finally, fold up your wrap, cut it in half, and enjoy!
