Super Easy Chickpea ‘Tuna’ Wraps

Makes: 1 wrap

 

Ingredients:

  • 230g chickpeas canned 
  • 3 tbsp vegan mayo
  • 1 tsp dijon mustard
  • 1 tsp lemon juice
  • 2 tbsp spring onion sliced
  • 1 ½ tsp fresh dill chopped
  • salt and pepper to taste
  •  1 regular tortilla wrap
  • 1 handful of romaine lettuce
  • 1 small handful of Good4U Super Greens 

 

Method:

  1. Place the chickpeas, mayo, mustard, lemon juice, spring onion and fresh dill into a large bowl. 
  2. Mash up the ingredients in a bowl with a fork or masher to your desired texture. 
  3. Spoon the filling mixture onto the centre of the wrap and spread evenly. 
  4. Sprinkle over some lettuce and Good4U Super Greens to the centre of the wrap. 
  5. Finally, fold up your wrap, cut it in half, and enjoy!
