Super Easy Winter Salad

Ingredients:

2 small sweet potatoes, cut into 1/2-inch circles

2 tbsp extra virgin olive oil

1 tbsp chipotle chili powder

2 tsp smoked paprika

Pinch of salt and black pepper

1 can chickpeas, drained

1 large head kale, shredded
-
1-2 avocados, sliced

Handful of Good4U Caesar Crumble Salad Toppers

Drizzle of Mary Berry's Caesar Dressing
Method:

Preheat the oven to 200/180°C fan.

In a baking tray, add the chopped sweet potatoes, olive oil, chipotle chili powder, paprika, salt, and pepper. Toss well, and place in the oven for 20 minutes.

After 20 minutes, add the chickpeas and place back in the oven for another 20 minutes until crispy.

In a large salad bowl, place the kale, sweet potatoes, and chickpeas. Top with the sliced avocado and Caesar Crumble Salad Topper and toss together.

Finally, drizzle with Caesar dressing and enjoy a delicious nutritious salad.
