Carrot & Coriander Soup


  • 1 tablespoon of vegetable oil
  • 1 onion, finely chopped
  • 1 teaspoon of ground coriander
  • 1 medium potato, peeled and diced
  • 500g of carrots, peeled and chopped
  • 1.25 litre of vegetable stock
  • Salt and freshly ground pepper


To Serve


In a saucepan, fry the onion in the oil for 5 minutes until soft. Add the potato and coriander and fry for another minute then add the carrots and vegetable stock. Season well with salt and pepper, bring to a boil then reduce the heat and simmer for 15-20 minutes until the carrots are soft. Puree the soup with a stick blender or in a liquidiser.
