Viral Potato Flights

Ingredients:

  • Bag of mini potatoes
  • Tin of baked beans
  • Sprinkle of vegan cheese (grated)
  • Vegan sour cream 
  • Handful of chives (chopped)
  • 1 avocado, smashed
  • Cherry tomatoes, sliced
  • Beetroot hummus
  • Good4U Super Greens
  • Good4U Garlic and Herb Salad Toppers

 

Method:

  1. Preheat the oven to 200°C/180°C fan. Once preheated, place some mini potatoes onto a baking tray and into the oven for 40 minutes, stabbing the potatoes with a knife halfway through.
  2. Once the potatoes are out and slightly cooled, slice them all in half.
  3. Potato filling 1: Heat some baked beans over the hob. Once heated, spoon some baked beans into the centre of the potatoes. Sprinkle with some vegan cheese and Super Greens for extra crunch and nutrition. 
  4. Potato filling 2: Spoon some vegan sour cream on top of the potatoes, top with a spoonful of chopped chives and a handful of salad toppers - we’ve gone for garlic and herb but choose your favourite!
  5. Potato filling 3: Load the potatoes with the smashed avocado, sliced cherry tomatoes and Super Greens. 
  6. Potato filling 4: Spread a spoonful of beetroot hummus onto the centre of the potatoes, and sprinkle with a handful of G4U Super Greens.  
  7. Finally, you are ready to serve up your nutritious potato flights and enjoy!
