Warming Three-Bean Chilli Jacket Potatoes

Serves 4

Ingredients

For the three-bean chilli

  • 2 tbsp vegetable oil

  • 2 onions, finely chopped

  • 4 garlic cloves, finely chopped

  • 2 yellow peppers, deseeded and roughly chopped

  • 2 roasted red peppers from a jar, drained and roughly chopped

  • 15g fresh coriander, stalks finely chopped and leaves reserved

  • 2 tsp ground cumin

  • 1 tsp ground coriander

  • ¼ tsp ground cinnamon

  • 2 tsp dried oregano

  • 1 x 400g tin black beans

  • 1 x 400g tin kidney beans

  • 1 x 400g tin cannellini beans

  • 1 x 400g tin chopped tomatoes

  • 300ml vegetable stock

  • Salt and black pepper, to taste

For the jacket potatoes

  • 4 baking potatoes

  • 1 tbsp vegetable or olive oil

  • Pinch of salt

To serve

  • Vegan sour cream or natural/Greek-style yoghurt

  • Spring onions, finely sliced

  • Fresh coriander leaves

  • Good4U Salad Topper Garlic & Herb, or Chilli & Garlic

  • Good4U Super Sprouts

  • Butter or plant-based butter, optional

Method

  1. Heat the oil in a large, deep pan over a medium-low heat. Add the onions with a pinch of salt and cook for 10–12 minutes, until softened.

  2. Add the garlic, yellow peppers and roasted red peppers. Cook for a further 5 minutes.

  3. Stir in the chopped coriander stalks, cumin, ground coriander, cinnamon and oregano. Cook for another 2–3 minutes, until fragrant.

  4. Drain and rinse the black beans, kidney beans and cannellini beans, then add them to the pan with the chopped tomatoes and vegetable stock. Stir through the Good4U Pasta Boost and season with salt and pepper.

  5. Bring to a simmer, then reduce the heat and cook gently for 45–60 minutes, stirring occasionally, until thickened. Add a splash of water if needed.

  6. Meanwhile, preheat the oven to 200°C / 180°C fan / Gas 6.

  7. Prick the potatoes all over with a fork. Rub with the oil and a little salt, then place directly onto the oven shelf.

  8. Bake for around 1 hour, or up to 1 hour 20 minutes for larger potatoes, until the skins are crisp and the centres are soft.

  9. Cut a cross into the top of each potato and gently open it up. Add butter or plant-based butter, if using, followed by a generous spoonful of three-bean chilli.

  10. Finish with sour cream or yoghurt, spring onions, fresh coriander, Good4U Super Sprouts and a generous sprinkle of Good4U Salad Topper.
