Easy Healthy Flapjacks

Ingredients:

200g Flahavans Porridge Oats

150g dates, chopped

2 bags of Good4U Banana Nutriballs

40g desiccated coconut 

2 tbsp Good4U Vitamin Breakfast Boost

1 lemon, zested

½ lemon, juiced

1 apple, grated

1 tbsp maple syrup or agave syrup 

100g dairy-free butter 



Method:

  1. Preheat the oven to 200C/180°C(fan). Grease a 20cm square cake tin and line with baking paper.
  2. Place the oats, chopped dates, desiccated coconut, breakfast boost, lemon juice, lemon zest and grated apple into a food processor or high powered blender. Pulse until broken down and well combined. Set aside. 
  1. Place the maple syrup and butter into a medium saucepan and heat gently until melted. 
  2. Scrape the oat mixture into the saucepan and stir well. Add the broken nutriballs and mix, making sure that all the dry mixture is completely coated in the butter mixture.
  3. Pour into the prepared tin and use a rubber spatula to press into the tin. Make sure that you press down really well as this will help the flapjacks hold together.
  4. Place in the pre-heated oven and bake for 20 minutes until starting to turn brown. 
  5. Remove from the oven and cut into slices in the tin using a sharp knife. Leave to cool completely in the tin then cut again before removing from the tin.
