Healthy, Kid-Friendly Chocolate Chip Cookies

Ingredients:

1 tbsp flaxseed mix 

3 tbsp water, room temperature

60g coconut oil, melted and cooled

85g coconut sugar

1 tsp vanilla extract

90g oat flour

45g rolled oats

50g shredded coconut

½ tsp baking soda

¼ tsp salt 

85g dark chocolate chips

2 tbsp Good4U Kids Everyday Boost

Sea salt, for sprinkling on top


Method:

  1. Preheat oven to 200/180°C fan and line a baking tray with parchment paper.

  2. In a medium bowl, mix together flaxseed mix and water, let it sit for 5 minutes. After 5 mins, combine the flaxseed mix, coconut oil, coconut sugar and vanilla extract into a bowl until smooth. 

  3. Next, add in the oat flour, rolled oats, shredded coconut, baking soda, salt and Kids Boost and mix until well combined. Then fold in the chocolate chips.

  4. Once the mixture has fully combined, scoop and roll out 1 tbsp of dough into small balls and place onto the baking tray.

  5. Place the cookies into the oven and bake for 10 minutes or until the cookies are golden brown. 

  6. Finally, remove from the oven, leave the cookies to cool for 10 minutes and sprinkle with some sea salt, then enjoy!
