Kid-Friendly Crumbly Strawberry Oat Bars

Ingredients: 

For the strawberry filling:

  • 340g fresh strawberries, stemmed and sliced (2 cups when sliced)

  • 80g agave

  • 15g cornstarch

  • 2 tsp lemon juice

  • 1/2 tsp vanilla extract

For the oat mixture:

  • 190g all-purpose flour

  • 120g large flake rolled oats

  • 230g cold vegan butter

  • 220g brown sugar

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 2 tbsp Good4U Vitamin Breakfast Boost

Method:

  1. Preheat your oven to 200/180°C fan. Line the bottom of an 8" x 8" baking pan with parchment paper.

  2. FCreate the strawberry filling by mixing the strawberries, agave, cornstarch, and lemon juice in a saucepan until the cornstarch is dissolved. Put over medium heat and cook for 3-5 minutes, stirring frequently, until the liquid turns into a thin consistency and the strawberries begin to break down. Remove from the heat, stir in the vanilla extract, and set aside.

  3. Make the oat mixture by adding the flour, oats, butter, sugar, baking powder, salt, and breakfast boost to a large bowl. Mash the butter into the mixture until you reach a crumbly texture and everything is mixed in.

  4. Assemble your oat bars by pouring half of the oat mixture into the prepared baking pan and pat down. Pour all of your strawberry sauce on top and spread around to evenly distribute. Sprinkle the remaining oat mixture on top of the strawberry layer, and lightly pat down.

  5. Bake for 35 to 40 minutes, until lightly browned on top.

  6. Let cool before serving and slicing into bars. Store the cooled strawberry bars in an air-tight container.
