Shellys Super Loaf

(Makes 24 large slices)
The most comforting, wholesome bread. Smother in butter and jam.. yummy


600g oats
300g wholemeal flour
200g cream flour
150g (Half pack) Good4U Breakfast Boost
4 heaped tsp bread soda
Pinch salt
1lt buttermilk
1 pot natural yoghurt any kind
1 egg

1 tbsp olive oil


1. Preheat oven to 185 degrees
2. Line a large baking tin with greaseproof paper, just let it fold over sides
3. Weigh oats and sieve flour, salt and bread soda
4. Air oat flour mix by lifting and letting fall through finger tips
5. Whisk half buttermilk in glass with egg and olive oil
6.Then add remaining buttermilk and yoghurt and mix well
7. Mix will appear quite wet, this is normal. Empty into lined tin and score  bread  at centre in 4 to let the fairies out
8. Bake in centre of oven for at least an hour
9. Cool on a wire tray
10. Store in airtight container, keep fresh for 3 days or slice and freeze
