Balsamic Goats Cheese and Beetroot Salad

4 to 5 medium beetroot

Extra-virgin olive oil, for drizzling

1 bag of salad 

½ shallot, thinly sliced

½ green apple, thinly sliced

30g goat cheese, sliced or crumbled. Alternatively you can use vegan feta.

Flaky sea salt

Freshly ground black pepper

  1. Toss all ingredients together, and then drizzle in the balsamic vinaigrette.
