Crisp Courgette & Couscous Salad

200g couscous

zest and juice of 1 lemon

2 tbsp olive oil

2 tbsp tahini paste

1 garlic clove, crushed

1 courgette

4 tomatoes, roughly chopped

200g vegan feta, crumbled

Handful of mint, leaves picked

Handful of parsley, leaves picked

1 red chilli, deseeded and sliced

  1. Cut the courgette into even strips and toss with olive oil. Heat a ridged grill pan until smoking hot, then place your courgette strips on. Cook until tender but with a crunch in the middle. 
  2. To cook the couscous, place it in a heatproof bowl and pour over boiling water, just enough to cover. Wrap cling film over the top of the bowl and leave for 5 minutes.
  3. To create an extra smooth dressing, blend your lemon zest and juice, oil, tahini and garlic in a Nutribullet.
  4. Uncover your couscous and spoon it into a large serving dish. Fluff the couscous and season with salt and pepper to taste. 
  5. Add the herbs, tomatoes, vegan feta and courgette, before finishing with a drizzle of dressing and a scatter of our Super Seed Salad Topper.
