Crunchy Vegan Caesar Salad

3 medium heads of romaine lettuce, washed and chopped

130g raw cashews

200ml water

2 cloves garlic

3 tbsp lemon juice

1 tbsp Dijon mustard

1 tbsp capers, drained

1 tbsp vegan Worcestershire sauce

½ tsp salt

Vegan Parmesan

  1. To make the dressing, soak the raw cashews in hot water for 5 minutes. Drain the cashews and pop them in a Nutribullet blender. Add the water, garlic, lemon juice, dijon mustard, capers, salt and vegan Worcestershire sauce. Blend until smooth.
  2. Wash and chop the lettuce, then add to a large serving dish. Pour over the dressing and toss together.
  3. Shave off some vegan parmesan and scatter over the salad. Add a sprinkling of our Caesar Crumbles and serve!
