Good4U Mexican Salad
Ingredients
- 85g cooked wholegrain rice
- 2 tbsp kidney beans
- 2 tbsp sweetcorn
- 2 tbsp roasted chickpeas
- 1 tbsp hummus
- 12 fresh chillies (optional)
- 25g Good4U Garlic & Chilli Salad Topper
- 2 handfuls mixed leaf lettuce
Method
- Wash the tomatoes and lettuce in cold water and pat dry
- Cut the tomatoes into halves and toss in a bowl with the greens
- Layer kidney beans, sweetcorn, rice and roasted chickpeas on top
- Add one large tbsp of Hummus and top with plenty of our Good4U Garlic & Chilli Salad Topper
