Good4U Mexican Salad

Ingredients

  • 85g cooked wholegrain rice
  • 2 tbsp kidney beans
  • 2 tbsp sweetcorn
  • 2 tbsp roasted chickpeas
  • 1 tbsp hummus
  • 12 fresh chillies (optional)
  • 25g Good4U Garlic & Chilli Salad Topper
  • 2 handfuls mixed leaf lettuce

Method

  1. Wash the tomatoes and lettuce in cold water and pat dry
  2. Cut the tomatoes into halves and toss in a bowl with the greens
  3. Layer kidney beans, sweetcorn, rice and roasted chickpeas on top
  4. Add one large tbsp of Hummus and top with plenty of our Good4U Garlic & Chilli Salad Topper
